Craft Kombucha – Living Goodness in a Bottle

Kombucha is a naturally fizzy drink made by fermenting sweetened tea with a symbiotic culture of bacteria and yeast. This ancient tea has been prized for its healing properties since 220 BC as it bubbles with gut-loving probiotics that support the body’s natural gut flora and promote overall wellbeing.


This beverage originated in the East and is made by fermenting sweetened tea with a symbiotic culture of bacteria and yeast for a few weeks at room temperature. The kombucha is then bottled for a week or two to contain released CO2 and encourage carbonation. The bottles are then cooled to slow down the carbonation and fermentation processes.

The name “Kombucha” reportedly derives from Korean physician, Dr. Kombu, who introduced the fermented tea to Emperor Inkyo of Japan in 414 AD as a curative for his chronic digestive problems. The tea was brought to Europe in the early 20th century and Kombucha has since grown in popularity around the world due to its many wellness benefits.

The fermentation process makes it rich with probiotics which can improve gut health and stimulate the immune system. This vitality boost is further aided by the high levels of vitamin C, antioxidants and energizing B-vitamins.

Some research has shown that this tea lowers bad cholesterol (LDL) and triglycerides while increasing good cholesterol (HDL), which in turn reduces the risk of heart disease. Drinking kombucha removes toxins from blood and digestive system, combats arthritis and gout by promoting Hyaluronic Acid production which relieves joint pain. Kombucha is also known to help manage type 2 diabetes by reducing blood sugar levels.


Our kombucha is lovingly handcrafted in small batches by Annelise van der Linden of Divine Health in the Loskop Valley.  Annelise is a business owner and has a passion for healthy living and natural well-being. She discovered the benefits of Kombucha from her sister in Ireland who struggled with an autoimmune disease and poor metabolism from gluten sensitivity.

The sisters  completed a fermentation course presented by a doctor from England to learn how to make Kombucha to address their discomfort. Soon Annelise was making kombucha in a variety of different flavors, to the delight of her husband and their four sons. Before long clients with medical conditions like cancer, lupus and MS were placing weekly orders of her handcrafted, healthy drink.

Annelise prepares our bespoke Sun-kissed Citrus and Berry Delight Craft Kombuchas exclusively for Schoonbee Landgoed using authentic methods from mineral water and black tea. Made with care in glass vats to capture the characteristic light fizz and tangy taste, the beverage is infused with either sun-kissed mandarins or fresh blueberries, and a dash of lemon from our farm.
